The Ingenio La Cabaña distillery was founded in 2004 within the long-established sugar factory of the same name in El Salvador. It was the first rum distillery in El Salvador and operates a multi-column still process, using a wash of fermented molasses. Its rums are generally aged for a minimum of 8 years in ex-bourbon casks.

The distillery markets its own proprietary Ron Cihuatán brand, and has also sold casks to independent bottlers over the years.

Ingenio La Cabaña operates one of the nation's many mills, theirs dating back to 1920. The first attempts at distilling there took place in the 1980s under nationalisation, producing industrial ethanol. This was abandoned in the 1990s however, and it was not until subsequent privatisation that these activities recommenced at the mill with a modern alcohol plant built in 1999. Rum poduction began in 2004 and in 2013 a subsidiary company called Licorera Cihuatán S.A. de C.V was established to manage this along with the ageing and marketing of the Cihuatán brand, launched in 2015.

The distillery uses the Ingenio La Cabaña’s own molasses, operates a multi-column still, and sells both bulk rum to independent blenders and bottlers, as well as warehousing stock for its own brands, which it solera ages in bourbon wood from Kentucky.
